As for this one in particular, I wondered why you use “уезжать” in the example for ЗАВТРА, but “уехать” in the example for ЧЕРЕЗ НЕСКОЛЬКО МЕСЯЦЕВ. Is there a special reason for this, or is it just a matter of taste?

Yes, there is a reason for these two forms. In Russian we use two aspects of the verbs: imperfect and perfect.
УЕЗЖАТЬ is the imperfect aspect.
УЕХАТЬ is the perfect aspect.
The using depends on the situation you are talking about. But actually this is a whole new grammar lesson. With time we will surely put it in our pages.
