Russian kvass

In today’s series “Read and Listen in Russian” we’ll tell you about the Russian kvass. Kvass is probably the most popular russian drink after vodka, and it’s certainly healthier than vodka as it has almost no alcohol and includes lactic acid that has a disinfectant effect. From the text below you will learn about the history of Russian kvass, its modern variations and how it can be made at home.

In the early Middle Ages the kvass was produced all over Europe. But then this drink was replaced by beer. In Russia, kvass remained super popular. It was made at home, in monasteries, in hospitals, in the army; many government establishments had their own kvass production. “Living”, and therefore perishable, the drink was made for sale in almost every village. Foreigners who visited Russia during the last millennium often recalled in their memoirs a refreshing kvass, long forgotten back home. There have even been several attempts to revive it in Europe. “In Russia we find a national drink that perfectly quenches thirst, can be made in every household, it’s liked by peasants, officers, doctors, landlords and even is consumed by the court people at the royal table. At the same time, it is very cheap and does not produce any of the harmful actions that are peculiar to alcohol”, – wrote the kvass enthusiast, German professor R. Kobert.

The ability of kvass to perfectly quench the thirst is related to the sour taste that lactic acid gives to it. This is due to the so-called “acid thirst” phenomenon. Therefore, acidification of beverages is widely used. In addition, lactic acid has a disinfectant effect and protects against bacterial poisoning. It is known that during the cholera epidemics in Russia, people who drank kvass were less likely to get sick.

В Росси́и квас ча́ще де́лали из хле́ба и зерново́го сырья́: со́лода, муки́, круп. Но нере́дко его́ получа́ли из све́жих и́ли сухи́х я́год и фру́ктов и да́же не́которых овоще́й, наприме́р, свёклы. In Russia, kvass was more often made from bread and grain raw materials: malt, flour, cereals. But sometimes it was obtained from fresh or dried berries and fruits and even some vegetables, for example, beets. All these raw materials contains carbohydrates which get fermented into alcohol and lactic acid. Traditional Russian kvass is a unique product of double fermentation – of alcohol and lactic acid. In principle, these same processes occur in the production of beer, wine and home fermented drinks. But when producing those, the lactic fermentation is inhibited so that there is more alcohol. And for the kvass, on the contrary, there should be very little alcohol, and enough acid.

А вот в 1960-1970-е го́ды появи́лись квасы́ в буты́лках, кото́рые не име́ли пра́ва носи́ть э́то назва́ние — они́ не броди́ли, а де́лались из квасно́го су́сла, са́хара, лимо́нной и моло́чной кисло́т. Всё э́то сме́шивалось и насыща́лось га́зом — напи́тки называ́лись “купажным ква́сом”. Потреби́тели их принима́ли за настоя́щий традицио́нный напи́ток.

Old Russian kvass began to change in the USSR. “Bochkovoy” was close to the traditional. Its quality was not always ideal, but it was a “living” drink obtained by double fermentation. But in the 1960s and 1970s different kvasses started being produced in bottles that did not have the right to carry this name – they did not ferment, but were made from leavened wort, sugar, citric and lactic acid. All this was mixed and saturated with gas – the drinks were called “blended kvass”. Consumers took them for a real traditional drink.

Её типи́чный соста́в — вода́, са́хар и́ли иску́сственные подсластители, подкислители, краси́тели, консерванты. Не́которые добавля́ли к э́тому ещё квасно́е су́сло. И на буты́лках со всем э́тим писа́ли «квас». В 1997 г. вы́шел но́вый ГОСТ, в кото́ром жи́дкость на осно́ве су́сла назва́ли «квасны́м напи́тком». Сейча́с э́тот те́рмин то́же уже́ вне зако́на — он упразднён вме́сте с сами́м станда́ртом.

But the most difficult years for the traditionally Russian drink have become the dark 1990s and almost the entire first decade of the 21st century, when kvass practically ceased to be made and under its name they sold soda with taste a la kvass. Its typical composition was water, sugar or artificial sweeteners, acidulants, dyes, preservatives. Some also added the kvass wort to this mix. And the bottles with all this were branded as “kvass”. In 1997, a new GOST was issued, in which the wort-based liquid was called a “kvass drink”. Now this term is already out of the law – it is abolished together with the standard itself.

На его́ этике́тке бу́дет и сло́во «квас», и упомина́ние, что э́то проду́кт броже́ния, то́лько в соста́ве кро́ме воды́, са́хара и квасно́го су́сла бу́дет ещё моло́чная, лимо́нная и́ли у́ксусная кислота́. В кваса́х двойно́го броже́ния их доба́вка не нужна́.

In 2005, they made an attempt to preserve kvass, in the new GOST it was defined as “a national soft drink with a volume fraction of ethyl alcohol no more than 1.2%, made as a result of incomplete alcohol or alcohol and lactic fermentation of the wort”. This was a step “back” along the path of reviving the traditional kvass, but there was still a concession to modernizers in the GOST. Kvass was allowed to be made not only by mixed double fermentation, but also by single-alcohol fermentation. This means that this drink will have very little natural lactic acid. Therefore, for the effect of freshness, acids will be added to it as in blended kvass. It can be distinguished only by the composition. There will be the word “kvass” on its label, and the mention that it is a fermentation product, but its composition, besides water, sugar and leavened wort, will include lactic, citric or acetic acid. In double fermentation kvass, these additives are not needed.

Хоти́те, вы мо́жете сде́лать квас са́ми. Ржано́й хлеб поре́жьте и подсуши́те в духо́вке до ко́рочки. 800 г таки́х сухаре́й залейте 4 л кипятка́ и держи́те 3-4 ча́са в тепле́. Процеди́те сквозь ма́рлю, доба́вьте 100 г са́хара и 25 г разведённых дрожже́й. Поста́вьте в тепло́ на 10-12 ч для броже́ния. Процеди́те. Мо́жно для вку́са доба́вить мёд и хрен. Квас держи́те на хо́лоде до 3 су́ток.

If you want, you can make kvass yourself. Cut the rye bread and dry it in the oven until it crusts. Take 800 grams of such breadcrumbs, add 4 liters of boiling water to it and keep for 3-4 hours in the heat. Filter through the cheesecloth, add 100 g of sugar and 25 g of diluted yeast. Put in heat for 10-12 hours for fermentation. Filter. You can add honey and horseradish to the taste. Keep kvass in the cold for up to 3 days.
