About Russian vodka

From one popular Russian drink – kvas – let’s go over to another one – vodka. Today’s story discusses the characteristics, history and even benefits of this spirit.

Водка – это русское национальное название хлебного вина (спирта), полученного на основе зернового сырья (ржи, пшеницы), передвоенного и затем разведенного мягкой родниковой водой до 40°. Иначе говоря, водка – это хлебное вино. Сам термин «водка» получил широкое распространение со второй трети 18 века, когда натуральные вина стали в обязательном порядке именоваться «виноградными», а для отличия крепких напитков потребовалось употребление других терминов.

Vodka is the Russian national name for bread wine (a spirit), obtained from basic cereal grains (rye and wheat), double distilled, and then dissolved in soft spring water until it’s 40% proof. In other words, vodka is bread wine. The term itself “vodka”, became widely adopted in the second third of the 18th century, when natural wines became known exclusively as “grape wines”, and in order to differentiate spirits, other terms were required.

Если говорить об истории возникновения водки, то родилась она на востоке. Впервые водка упоминается в начале Х века в трактате одного арабского алхимика. В Россию она была завезена в 1386 году. Водка легко вписалась в российскую историю.

If we are to talk about the story of vodka’s origins, we can say it was born in the east. Vodka is first found mentioned at the beginning of the 10th century on the treatise of an arabic alchemist. It was imported to Russia in 1386. Vodka easily made its way into Russian history.

Начало производства водки в России относят к XV веку. На территории Московского государства в этот период возникло не только винокурение (производство «хлебного вина» – одно из первых названий водки), но и монополия на него, как мера государственного финансового надзора.

The beginning of vodka production in Russia is attributed to the 15th century. In the territory of the state of Moscow in this period, began not only the distilling of vodka (the manufacture of “bread wine” is one of the first known vodkas), but also a monopoly on its production, like a method of monitoring state finance.

На протяжении веков для русской водки основным сырьем служила рожь. Но в течение последних 100 лет, особенно после 30-х годов 20 века, гораздо большую роль в производстве массовых сортов водки стала играть пшеница, а в определенные периоды экономической разрухи и войны выпускалась и картофельная водка. Однако лучшие, высшие сорта водки продолжают и поныне основываться на традиционном ржаном сырье (зерно, отруби). В качестве добавок к обязательной для русской водки ржи используется и другое зерновое сырье – овес, пшеница, ячмень и гречиха, в разных, но всегда небольших пропорциях.

For centuries rye served as the basic raw material of Russian vodka. But during the last 100 years, especially after the 1930s, wheat was to play a far greater role in the manufacture of mass-produced vodkas; and during periods of economic crisis and war, potato vodka was also produced. However, the best, highest quality vodkas continue to be based on the traditional raw materials of rye (both grain and bran). Other grains, such as oats, wheat, barley and buckwheat are also used as additives to Russian rye vodka, but always in small proportions.

Что касается последовательности в процессе приготовления водки, то все происходит следующим образом:

As for the process of making vodka, it all takes place as follows:

– cырье измельчается и разваривается, в полученную массу добавляют дрожжи, начинается процесс брожения;

– The grain is crushed and boiled until soft, to this mass yeast is added, and the fermentation process begins.

– полученную бражку загружают в ректификационную колонну, где после многократного испарения и конденсации получается очищенный от примесей спирт;

– The brew produced is loaded into a distillation column, where after repeated evaporation and condensation the spirit is produced, cleared of impurities.

– полученный спирт разбавляют водой, очищают активированным углем и добавляют ингредиенты – лимонную кислоту, уксус, сахар, мед и другие компоненты.

– The spirit is diluted with water, the activated charcoal is cleared and other ingredients are added – citric acid, vinegar, sugar, copper and other components.

Срок хранения водки – 12 месяцев. При более долгом хранении происходит выщелачивание стекла бутылок, увеличивается щелочность напитка, возможно появление осадка. Все это ухудшает вкус водки.

The shelf-life of vodka is 12 months. If it is stored for longer, leaching of the glass bottles occurs, this makes the drink more alkaline, and may cause deposits. All of this impairs the vodka’s flavour.

У водки есть полезные свойства. Говорят, она может избавить от простуды, усталости, головной боли, высокого давления и плохого настроения. Кроме того, умеренное употребление этого напитка очень благотворно влияет на пищеварение и состояния организма в целом. Говорят, что после рюмки водки можно съесть целого теленка. А 30 грамм водки ежедневно значительно снижает уровень холестерина, что положительно сказывается на людях с сердечно-сосудистыми заболеваниями.

Vodka has useful properties. They say it can defend against colds, fatigue, headaches, high blood pressure and bad moods. In addition, moderate consumption of this drink has a positive influence on the digestive system and on the condition of your body as a whole. It´s said, that after a small glass of vodka, it’s possible to eat an entire calf. But 30 grams of vodka a day is known to lower cholestoral levels, which has a positive effect on people with cardio-vascular illnesses.

От простуды хорош простой рецепт – на сто грамм водки добавить с четверть чайной ложки молотого черного перца и залпом выпить. Хорошо прогревает горло. Правда, если у вас проблемы с желудком, то лучше не испытывать этот способ.

To treat a cold a good simple recipe is to add a quarter of a teaspoon of black pepper to 100 grams of vodka and to drink it in one go. It’s good for warming the throat. However, if you have any stomach problems, it’s best not to test this method.
